Cauliflower Quinoa Salad

Kate at Cookie and Kate posted this amazing-looking coconut curry quinoa dish this week. While salivating over it, I wondered about other ways to combine quinoa and raisins and vegetables. Inspired by Cookie and Kate’s recipe, I’ve come up with this quinoa salad. Serve it luke-warm, by itself, or cool, over spinach or arugula.

Cauliflower Quinoa Salad


  • 1 head cauliflower, chopped
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 4 mushrooms, sliced
  • 1/2 zucchini, sliced
  • 3 cups spinach, chopped
  • 1/3 cups raisins
  • 3 cups quinoa, cooked
  • 1/2 tsp ginger
  • 1/4 tsp cinnamon
  • 3 tbsp olive oil
  • 1 tsp salt


1. Roast cauliflower: Preheat oven to 400. Toss cauliflower in olive oil and salt and pepper. Roast the cauliflower until soft, about 20-25 minutes.

2. In saucepan over medium heat, heat oil and saute onions and garlic until they start to brown, 10-12 minutes. Add mushrooms and zucchini and cook until soft, another 8 minutes.

3. Add raisins, cooked quinoa and roasted cauliflower.

4. Wilt spinach in separate sauce pan, then add to the other vegetables and quinoa.

5. In bowl, stir together olive oil and spices and pour over the quinoa. Mix and serve slightly warm.



  1. Raisins and dried cherries are some of my favorite things to combine with savory ingredients – I’ve even added them to soups (with mixed results)… I’m loving cauliflower right now. This looks like a great way to use it!
