Leek and Oka Cheese Sandwich

This sandwich makes a tasty, light lunch. This was my first time trying Oka cheese, a flavourful, medium-hard cheese from Quebec. It pairs wonderfully with warm leeks and ripe tomatoes in this sandwich. A nice hearty bread is best, especially one studded with sunflower seeds like this one.

Leek and Oka Cheese Sandwich

Ingredients

  • 2 tbsp butter
  • 1 bunch leeks, chopped
  • salt and pepper to taste
  • tomato
  • Oka cheese
  • greens
  • sandwich bread

Instructions

1. Sauté leeks in butter over medium-low heat until soft, about 8-10 minutes. Salt and pepper, to taste.

2. Top sandwich with warm leeks, tomato slices, cheese, and greens.

Notes

The leeks will make more than needed for 1 sandwich. Refrigerate leftovers to make more sandwiches the next day.
